Vegetable Upma

When it comes to Upma, I have had to cave in and resort to the traditional way of making it with ghee only; and a lot of it at that. But the results are indeed delicious as a recent phone call from hubby confirmed it.
Adding some veggies is my way of making it a wee bit healthier and I can get my kids to eat more veggies this way.

Ingredients

  • 1 1/2 cups Rava ( suji/ farina cereal)
  • 1/4 cup Ghee ( Neyyi/ Clarified butter)
  • 3 1/2 cups water
  • 1/2 cup frozen carrots and peas
  • 1 small onion, chopped
  • 1/4 tsp jeera ( cumin seeds)
  • 1/4 tsp rai ( mustard seeds)
  • 1 dried red chilli
  • salt to taste

Method

  • Heat the ghee in a pan untill warm.  Add the rai, jeera and red chilli to the ghee.
  • After a minute add the chopped onions. When they turn trancelucent, season with salt and add the frozen veggies.
  • Once the vegetable have defrosted, add the water and bring to  a boil. 
  • Slowly pour in the rava into the boiling water, while stirring constantly.
  • Reduce heat and allow it to thicken.
  • Serve hot as is or with some pickle.

Notes

  • I have omitted some items in the seasoning like urad dal and curry leaves.
  • Also I have not added any green chillis to omit the heat and make it more kid friendly.
