Blueberry Pancakes

Aditya loves pancakes and I always make extra to freeze for later. This time around I decided to make the pancakes a bit more healthy and added whole wheat pasty flour to the recipe.  He loved them and did not notice the change.

Ingredients

  • 1 cup All Purpose Flour
  • 1 cup Whole Wheat Pastry Flour
  • 2 tbsp Sugar
  • 1/2 tsp salt
  • 3 tsp Baking soda
  • 2 cups milk
  • 2 eggs, beaten
  • 3 tbsp cooking oil
  • 1/2 cup blueberries

Method

  • Mix the dry ingredients together in a bowl. Make a well in the center.
  • Combine all wet ingredients separately and pour into the center of the  dry ingredients.
  • Mix everything together until combined.
  • Heat a griddle or pan and reduce to medium heat.
  • pour about 1/4 cup batter pan and sprinkle some blueberries on top
  • cook for two minutes on each side.
  • Makes about 16 pancakes.

Notes

  • I usually cook on low heat as the pancakes brown too quickly for me.  It will depend on the pan or griddle you are using.
