Aditya loves pancakes and I always make extra to freeze for later. This time around I decided to make the pancakes a bit more healthy and added whole wheat pasty flour to the recipe. He loved them and did not notice the change.

Blueberry Pancake
Ingredients
- 1 cup All Purpose Flour
- 1 cup Whole Wheat Pastry Flour
- 2 tbsp Sugar
- 1/2 tsp salt
- 3 tsp Baking soda
- 2 cups milk
- 2 eggs, beaten
- 3 tbsp cooking oil
- 1/2 cup blueberries
Method
- Mix the dry ingredients together in a bowl. Make a well in the center.
- Combine all wet ingredients separately and pour into the center of the dry ingredients.
- Mix everything together until combined.
- Heat a griddle or pan and reduce to medium heat.
- pour about 1/4 cup batter pan and sprinkle some blueberries on top
- cook for two minutes on each side.
- Makes about 16 pancakes.
Notes
- I usually cook on low heat as the pancakes brown too quickly for me. It will depend on the pan or griddle you are using.
