Lazy Day Jambalaya ( Rice Cooker)

Though I am calling it the Lazy Day Jambalaya, I guess I could have also called it the Busy Day Jambalaya instead. The first time I made the dish, it was one of those crazy day’s when I came home and there was absolutely nothing to eat. The kids wanted my attention which meant I would get very little time to spend on dinner.    So I just chopped up some onions, tomatoes, peppers and some chicken sausage and threw them all into the rice cooker along with some rice and seasoning. It took me about 15 minutes. Then it was play time with the kids.

About 45 minutes later dinner is ready.  What could have been easier than that?

The verdict I recieved from Shilpi was “Excellent” which is usually very rare. Sinc then I have been making it almost exactly the same.  with minor substitutions. I sometimes used canned tomatoes instead of fresh, and add celery if I have it on hand.

Ingredients

  • 2 cups rice ( I used Jasmine Rice)
  • 1 1/2 cup onions, chopped
  • 1 cup green bell pepper, chopped
  • 1/2 cup red bell pepper, chopped
  • 1  cup tomatoes, chopped
  • 1 tsp ginger garlic paste
  • 1 1/2 cup chicken sausage, cut in 1/2 inch wide discs
  • 3 tbsp tomato paste
  • 1 tsp garlic powder
  • 1/2 tsp Italian Seasoning
  • 2 tsp worcestershire sauce
  • 1/2 tsp red chilli powder
  • salt according to taste
  • 3 cups water

Method

  • Wash the rice well and put it in the electric rice cooker.
  • Mix the tomato paste, salt, ginger garlic paste, worcestershire sauce, Italian seasoning and chilli powder into the water and add it to the rice.
  • Next add all the other ingredients and turn on the rice cooker.
  • Serve hot when done.

Notes

  • Time taken for cooking varies per cooker. Mine takes around 45 min.
  • If  you want to add chicken or other meast I would suggest cooking them a bit before adding them.
  • Shrimp can be added raw after about 25 – 30 minutes of cooking.
