Atukula Uppma (Flattened Rice Upma)

Atukulu Upma or Poha is another quick breakfast or snack which Shilpi keeps asking for regularly. It’s a real easy to whip up in less than 20 minutes even when I am being interrupted constantly every 2 minutes :) .Atukula Upma

Ingredients

  • 2 cups Atukulu
  • 1/2 cup onion, diced
  • 3 green chili, diced small
  • 1/4 tsp jeera
  • 1/4 tsp rai
  • 1/4 tsp urad dal
  • 1/4 tsp turmeric
  • 2 tbsp oil
  • 2 tbsp ghee
  • 10 curry leaves
  • 1 tbsp lemon juice

Method

  • Heat the oil and ghee together in a pan.
  • Add the seasonings ( jeera, rai, urad and red chilli) to the pan.
  • Next add the curry leaves
  • Add the onions and green chili. Saute till the onions become translucent in color.
  • Add the turmeric and salt. mix well
  • Wash the Atukulu with water and squeeze out any excess. Add them to the onions.
  • Mix well and cook for a few min.
  • Reomve from heat, add the lomon jusice and mix well again.
  • Serve hot.

Notes

  • Lemon juice is optional but this really tastes great with lemon in it.
