Tomato Khichidi

This is a quick week night meal. I have it scheduled on my menu plan for Thursday, but cooked it tonight. Tastes good as is or served with yoghurt and pickle.

Ingredients:

  • 1 can chopped tomatoes
  • 2 cups rice
  • 1 cup toor dal (lentils)
  • 1 cup onion chopped
  • 1 cup lima beans
  • 1 medium potato chopped
  • 3 tbsp cilantro chopped
  • 1 cinnamon stick
  • 3 cloves (spice)
  • 3 tbsp oil
  • 3 cloves garlic
  • 1 inch of ginger
  • Salt to taste

Method:

  • Grind the ginger and garlic and put aside.
  • In a pressure cooker, heat the oil and add the cinnamon and cloves.
  • Next add the onions and sauté until the onions begin to brown. Add a little salt to the onions.
  • Now add the ginger – garlic paste, potatoes, lima beans and tomatoes to the onions and cook for a few min.
  • Rinse the rice and dal well and add to the cooker.
  • Cook on high for 3 whistles in the cooker and remove from heat.
  • Once the lid can be opened stir in the cilantro and add more salt if required.
  • Serve hot.

Notes:

I add very little salt to the onions and add more salt to the dish at the end. Too much salt in the beginning will prevent the dal from cooking well.

  • You can use any vegetables you like in the khichidi.
