Tomato Garbanzo Soup

This soup was inspired from My Friend Bharathi and Soup Plantation. Bharathi made a soup with Garbanzo in it and we loved it. Later we also had a Cheesy Tomato soup at Soup Plantation. So mine is a combination of the two. Cheese and Garbanzo in a Tomato Soup can really jazz up the soup.

Tomato Garbanzo Soup

Ingredients

1 ½ cans – chopped tomato
½ 8oz. can – tomato paste
1 can – vegetable broth
1 can – garbanzo beans
¼ cup – grated cheddar cheese
3 cans – water
1 – onion chopped
1 tbsp – olive oil

Method

In a large stock pot add the olive oil and sauté the onions in it lightly.
Next add in the tomatoes and tomato paste. Stir well to mix.
Finally add in the garbanzo beans and the vegetable stock.
I used the stock can to add the water too.
Let the whole thing come to a boil and reduce it to a simmer.
Remove from heat and using an immersion blender puree everything.
An occasional piece of tomato or garbanzo is ok.
Return to heat and let the soup thicken a bit.
Finally add the cheese and mix well.
Serve with a dollop of cream or a few croutons.
It makes for a hearty and satisfying soup.
