Chow Mein

Chow Mein

Ingredients

2 packets – noodles

1 cup – carrot juliennes

1 cup – beans, French cut

1 cup – cabbage, thinly sliced

1 cup – mung bean sprouts4 – Scallions, chopped

4 tbsp – soy sauce

4 tbsp – vinegar

2 – eggs

Method

Cook the noodles according to directions. I usually use the pre cooked noodles found in Asian stores.

Heat about 3 tbsp of oil in a heavy wok or pan. Add ¼th of the beans carrots and scallions and stir-fry on high for a minute.

Next add 1/4th of the noodles and a tbsp of soy sauce and vinegar. Stir fry for a couple of minutes.

Add 1/4th of the cabbage and sprouts toss well and remove from heat immediately.

Repeat process for the remaining ingredients.

Make an omelet of the eggs and rough chop into bite size pieces. Combine with the noodles and serve hot.

Can be served with any other Chinese accompaniment or eaten as is.
