Orzo with Chicken and Veggies

Ingredients

2 cups – Orzo

¾ cup – frozen corn and peas

¼ cup – chopped frozen spinach

1 cup – cooked chicken

1 can – chicken gravy

½ cup – milk

¼ cup – shredded mozzarella cheese

1 tbsp – olive oil

Method

Cook the Orzo pasta according to directions, drain and keep aside.

Heat oil in a pan. Add the carrots and peas and cook for a minute on medium heat.

Add the spinach and cook for another minute.

Next add the chicken , the gravy and the milk.

Stir well and continue to cook on medium heat.

When the gravy begins to bubble add the cheese. Stir well to incorporate and remove from heat.

To Serve

Put the orzo in a bowl and top with the chicken veggie mixture.

Serve immediately.
