Breakfast Bread (Banana Oatmeal bread)

This was supposed to have been a recipe for breakfast bars. The bars turned out to be a bit soft and spongy. So I call it banana bread instead. It’s really tasty, not too sweet and a super grab on the go breakfast for us.

Ingredients

1 1/2 cups flour
1 teaspoon salt
1/2 teaspoon baking soda
½ teaspoon baking powder
½ teaspoon cinnamon
1/2 cup light sourcream
1 cup brown sugar
1 large egg
3 bananas, mashed
1 teaspoon vanilla
1 1/2 cups raw quick-cooking oats

Method

Combine flour, salt, soda and spices and set aside.

In a large bowl, beat butter, sugar and egg until fluffy. I used my Kitchen Aid mixer with the wish attachment

Add bananas and vanilla beat until smooth.

Gradually stir in flour mixture and oats until well combined. I switched to the paddle attachment here and put in a big spoon of flour and oats alternately.

Pour into a lightly greased 9×13 baking pan.

Bake at 425° for about 25 minutes or until golden.
