For today’s lunch I packed cucumber sandwiches. Shilpi’s sandwiches have tomatoes in them, but I omitted those for Aditya. He is allergic to raw tomatoes. Also the sandwiches have a sour cream spread in them instead of mayo. Again Aditya is allergic to raw eggs. The paneer cutlets are nothing but slices of paneer coated with a mixture of bisquick and buttermilk and baked in an oven. I will post the recipe later. I decided to keep the fruit and treat the same i.e. watermelon and cake. The bread for the sandwiches was baked at home yesterday evening and that recipe will be posted later.
The extra small container in shilpi’s box contains ketchup to go with his paneer cutlets. Aditya is again allergic to something in the ketchup. No he is not allergic to tomatoes in all forms. I have given him cooked tomatoes and he is fine with that. Same goes with cooked eggs. It is peanuts that he is allergic to in any form. That is because peanuts really do not undergo any chemical changes when cooked, but tomatoes and eggs do undergo chemical changes when cooked and hence the difference in allergic reactions to cooked and raw foods.
I also added two string cheese sticks for Aditya. I am still not too sure if he is going tolike his lunch today and have played it safe by adding the cheese. I know he likes it and it is pretty filling. I am hoping the paneer cutlets will satisfy shilpi’s wish for something heavy and filling.
