Potato Curry with Capsicum

Another simple potato recipe

Ingredients

Potatoes – 3 medium, boiled and chopped
Onions – 2 medium, chopped
Capsicum – 2 medium, chopped
Rai (mustard seeds) – ½ teaspoon
Ajwain – ¼ tsp
Jeera (cumin seeds) – ½ tsp
Turmeric powder – a big pinch
Salt to taste
Oil – 4 tbsp
Cilantro for garnish

 

Method

Heat oil in a pan and add the seasonings ( rai, jeera and ajwain). After a few seconds add the onions and sauté till the onions are translucent in color. Season with salt and turmeric.

Add the capsicum next and cook on a medium flame till they soften. Then add the potatoes and mix well. Cook for a few more minutes. Stir in some chopped cilantro a minute before removing from the flame.

Garnish with a few extra sprigs or chopped cilantro and serve hot with rice or roti.

Notes:

I used orange capsicum in this curry.
I also did not add any green chillies in the curry as Aditya was also going to eat it.
