Tadka Dal

This is a real simple recipe and nothing could be easier. This is actually a recipe by Shilpi. He always kept telling me about the tadka dal made by a friend of his, during his school days in Canada. ( until I finally made it ;) )
Ingredients

Toor dal – 1 cup
Water – 2 ½ cups
Cumin seeds – ½ tsp
Mustard seeds – ½ tsp
Garlic – 1 clove crushed
Red chilli – 1
Tomato – 1 medium, diced
Oil – 2tsp
Salt to taste
Coriander chopped for garnish

Method

Cook the dal in a pressure cooker. When done mash and stir well with a heavy ladle. Return to heat.

In a separate pan heat the oil and add the seasonings i.e. cumin, mustard garlic and red chilli. Add the hot seasoned oil to the dal. Add salt. Finally add the chopped tomato and cook for 5 more min.

Remove from heat, garnish with cilantro and serve hot with rice or roti.
